Wild Rice Turkey Patties; delicious and affordable!

INGREDIENTS:

  • 1 cup cooked wild rice or quinoa
  • 1 tsp sage
  • 3/4 cup chopped onion
  • 1/2 tsp rosemary
  • 1/2 cup chopped green or red pepper
  • 1 1/2 tsp thyme
  • 1/2 cup grated carrot
  • 1 1/2 tsp whole fennel
  • 2 cloves minced garlic
  • 1 1/2 tsp sea salt
  • 1 beaten egg
  • 1/4 tsp black pepper
  • After mixing ingredients well add 1 pound Ferndale Market ground turkey. Incorporate together without over working mixture.

DIRECTIONS:

Shape the mixture into 9 small or 6 large patties. Lightly brown them on both sides in a large fry pan.  Cover and cook over medium to medium low heat until meat
is no longer pink and veggies are tender. Flip after 10 minutes.  Serve with a salad, steamed or baked sweet potatoes, squash or in a whole wheat bun for a tasty burger.  These patties store well in the fridge for a couple of days.  Reheat in a covered pan with a couple tablespoons of water.
